Packed with vitamin C and fibre, cauliflower also comes in shades of green, purple and orange. The cauliflower is a cousin of broccoli and cabbage.

One floret and you’re hooked.

LEVEL: EASY

INGREDIENTS

  • 1 head of cauliflower, cut into florets
  • 1 c. all-purpose flour
  • 2 c. GF panko breadcrumbs
  • 3 large eggs, beaten
  • kosher salt
  • Freshly ground black pepper
  • 1 c. barbecue sauce
  • 1/2 c. brown sugar
  • Juice of 2 limes
  • 1 tsp. garlic powder
  • Ranch dressing, for serving (optional)

DIRECTIONS

  1. Preheat oven to 375 degrees F. In a large bowl, combine flour and cauliflower, Toss until fully coated.
  2. Set up a dredging station: In one bowl, add panko breadcrumbs and in another bowl whisk eggs and add 2 tablespoons water. Dip cauliflower in beaten eggs, then panko until fully coated. Transfer to a parchment-lined baking sheet and season generously with salt and pepper.
  3. Bake until golden and crispy, 20 to 25 minutes.
  4. Meanwhile, in a small saucepan over low heat, warm barbecue sauce, brown sugar, lime juice, and garlic powder.
  5. Coat baked cauliflower in sauce and serve with ranch if desired.

We got the inside scoop! The Chopped Leaf on Scarth Street is adding GLUTEN FREE BREAD to their list of options. Gluten free bread means we now get to try their three sandwiches.

The Chopped Leaf already has tons of gluten free options including their Whole Bowls, salads, GF soups, salad rolls, and cookies. The fact that they have so many options makes them ideal for catering downtown office meetings and parties. They are high quality nutritious meals, which aren’t going to make you feel lethargic for the rest of the afternoon.

The staff is knowledgeable and well trained. They know all about the dangers of cross contamination, as long as you tell them ahead that it has to be gluten free.

BASIL TOSS- A mixture of arugula, spinach, red chard, kale, sprouts tossed with white wine pecans, carrot, chives and beets in a basil vinaigrette $8

PEPINO PEMELO- Cucumber, spinach, grapefruit, arugula, radish, cilantro and red onion with a citrus ginger mint dressing then topped with candied ginger $10

LOBSTER ROLL- Langoustine lobster, fresh spinach in a creamy sun-dried tomato and herb béchamel sauce topped with Fruilano and old white cheddar cheese served on our house-made artisan roll $12

EMMA ARTICHOKE CIABATTA- Grilled artichokes, roma tomatoes, red chard, onion, carrot, mushrooms, zucchini with basil pesto aioli served on our house made ciabatta bun $10 V

BEEF TENDERLOIN- Dijon marinated tenderloin, roma tomatoes, red onions, fresh horseradish, pea shoots with an aged cheddar cheese crisp and arugula pesto aioli served on our house-made artisan roll $10
