The fall season joke is always about how pumpkin spice is overused in baking, unfortunately, with Celiac Disease you don’t get to experience it as much. You don’t realize how much you miss it until you can’t have it. Terrific if you have a sweet tooth because these pumpkin spice pancakes are covered in a caramel drizzle sauce and sprinkled with pecans.

It’s not very often we get seasonal breakfast food so definitely suggest these pancakes!

First, be aware of the few Subway meats that have gluten (see below) and avoid those. Second, tell your sandwich artist that you have a condition where you can’t have gluten (or Celiac disease if they know what it it). Order a chopped salad  ask them to use clean utensils, or ask them to put your meat and vegetables in the salad whole. Add some Lay’s chips for a side.

Garlic Parmesan Potato Stackers

 Garlic Parmesan Potato Stackers
Serves 10–12

INGREDIENTS

Casserole
10 russet potatoes
1 ¼ heavy cream
1 ½ cup parmesan cheese
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon pepper

PREPARATION

1. Preheat oven to 375°F/175˚C.
2. Slice up the potatoes about a quarter inch thick.
3. In a large bowl, mix the potatoes, heavy cream, parmesan cheese, garlic powder, salt, and pepper, and stir until all the potato chips are coated.
4. Spray a muffin tin with cooking spray, then stack about 10-12 chips in each muffin cup.
5. Place the potato stacks in the oven for about an hour or until they are fully browned.
6. Allow to cool, then serve with sour cream and enjoy!

Slow Cooker Loaded Baked Potato Soup

Loaded up baked potato (lots of cheese and bacon) soup!

Stick to your ribs and is perfect to keep you warm on those cold Saskatchewan days.

Serves 6Ingredients

  • 1 (32 oz.) bag frozen hash browns
  • 1 (32 oz.) box chicken broth
  • 1 (10 oz.) can condensed cream of chicken soup
  • 1 (8 oz.) package cream cheese, softened
  • 1 1/2 cups sharp cheddar cheese, grated, plus extra for garnish
  • 3/4 cup crumbled bacon, plus extra for garnish
  • 1/2 teaspoon fresh rosemary, minced
  • kosher salt and freshly ground pepper, to taste

Directions

    1. Combine hash browns, cheddar cheese, chicken broth, cream of chicken soup, bacon bits and cream cheese in slow cooker.

    1. Season with salt and pepper, then use a spoon to break up cream cheese and mix things together.

    1. Place lid on slow cooker and cook on HIGH for 3 hours, stirring occasionally, or until potatoes are tender.
    2. Taste and adjust seasoning, if necessary. Garnish with rosemary and/or more cheddar cheese and bacon bits.
    3. Serve hot and enjoy!

Cheesy Bacon Ranch Cheese Ball

BACON RANCH CHEESE BALL

Serves 6

Ingredients

  • 2 (8 oz.) packages cream cheese, softened
  • 1 1/2 cups cooked bacon, crumbled, divided
  • 1 cup sharp cheddar cheese, grated
  • 1 tablespoon ranch dressing dry mix
  • 1/4 cup green onions, finely chopped

 

    1. Combine cream cheese and cheddar cheese together in a large bowl and mix together.
    2. Sprinkle in ranch dressing mix, then fold in 3/4 cup bacon and green onions. Mix until everything is fully incorporated.
    3. Pour remaining bacon pieces onto your workstation and spread them out evenly.
    4. Use your hands to roll cream cheese mixture into a ball, then gently roll cheese ball in bacon bits.
    5. Refrigerate ball for at least 30 minutes, or until firm, then serve with crackers or fresh veggies.

Ingredients

  • 1 (8 oz.) package cream cheese, room temperature
  • 2 cups sour cream
  • 1 1/2 cups cheddar cheese, grated
  • 1 cup bacon (6-8 slices), crumbled
  • 1/3 cup green onions, chopped

Directions

  1. Preheat oven to 375º F.
  2. In a large bowl, combine cream cheese, sour cream, cheddar cheese, bacon and green onions and mix until they’re totally combined.
  3. Transfer mixture to a round baking dish and place in oven.
  4. Bake for 30-35 minutes, or until cheese is totally melted and dip is bubbly.
  5. Remove from oven and serve with chips or toasted bread.
